About Our Coffee



~The Bean~

 

Coffee Arabica - grows wild in Ethiopia above 4,000 feet. First consumed in 500 AD. In the late 1600's a Dutch spy stole a few plants from Ethiopia to cultivate them in Indonesia and the French colonies. In the 1700's the coffee plant spread throughout Brazil, Guatemala, Mexico, Costa Rica and Jamaica. In the 1800's the coffee plant was now growing and thriving in Columbia, Hawaii, Cuba and Salvador. The 1900's see Coffee Arabica back in Africa and the Ivory Coast.

Coffee Robusta - this hybrid commercial variety developed in the 1900's grows at lower elevations. Produces more beans per shrub - but at a lower quality with twice the caffeine. Primarily used as filler for commercial coffee.

 


~The Roast~

 

Light or Full City - Achieved when the natural sugars have caramelized and the beans have a rich brown color. Regional characteristics can be distinguished with this roast.

Medium or Vienna - Has a very full, rich flavor. The natural sugars in the bean are on the edge of darkness. The bean's oils are just beginning to surface.

Dark or French - Has a bold, full flavor. The bean is dark brown with oils at the surface - natural sugars are burning. The character of the sugars starts to compete with the regional character.

Extra Dark or Italian - Has a bittersweet flavor. The sugars have been burnt which results in an ebony, extremely oily bean.

Note: STRONG does not equal burnt! Strength in coffee is the portion of coffee to water, not the flavor or roast of the coffee bean.

~The Region~

 

Ethiopia - rich, winery, fruity character. Moka Harrar is the real mocha flavor - now confused with chocolate.

Indonesia - heavier, earthy character best represented by Sumatra. Gutsy and smooth in the darker roasts.

Central & South America - light and mild having a pleasant flavor and aroma liked by most people.

Africa - a sharper, winery character similar to Ethiopia. Kenya best represents the true African coffee taste.

For centuries coffee has grown under shade. It evolved and developed in the ancient, dense rainforests and cloud forests of North Africa. Introduced to other coffee growing regions, it was cultivated under the forest canopy, naturally protected from the direct sun.

 

As the forest canopy has disappeared, shaded coffee farms became a refuge for forest dwelling, large migratory bird populations that winter in coffee growing regions of the world. The Smithsonian Migratory Bird Center has documented sightings of up to 150 different species in shaded coffee farms - while unshaded farms counted only 5 - 20 bird species.

 

So come in, taste and enjoy this delightful, environmentally friendly coffee - you may not go back to boring coffee again!
